My new adventure of the day was learning how to shred chicken. Google is usually my “go to” for finding info, so I did just this to find the best way to “cook to shred” the chicken. I bought boneless, skinless chicken breasts and boiled them in a large pot. I added some sea salt, ground pepper, and a tablespoon of butter to give the chicken a little flavor. I boiled the chicken for about 30 minutes and set it aside to cool while I finished the rest of the above recipe. After the chicken cooled, I cut the breasts into halves and was able to tear it apart easily.

Disclaimer: Depending on how you cook the chicken and which type you buy, just make sure it is cooked thoroughly before adding it to the casserole!
